Shelly Shiflett

Shelly Shiflett is a nurse, wife, and mother of two sons - one of whom has celiac disease. She is certified as a Celiac Patient Advocate through the Celiac Disease Foundation, holds a business degree from Virginia Tech, a B.S. degree in nursing and a Masters in Child Health from Virginia Commonwealth University. When not researching celiac disease, she enjoys tennis, dance, and traveling. Shelly resides in Brentwood, Tennessee, with her supportive husband, children, and Bella the Weimaraner.

 
 
 
 

Christopher Shiflett

Son, co-author

Christopher was diagnosed with celiac disease at age 13. Since then he has spent some of his free time researching celiac disease, adapting new gluten-free recipes, and expanding his culinary skills and education. Christopher helped write and research Celiac Lost during high school and is currently in college pursuing aerospace engineering and business entrepreneurship at Virginia Tech. Christopher’s love of cooking and creating remains today, always interested in learning and improving. When not experimenting in the kitchen, he is active in sports, philanthropy, and academics. Favorite activities include football, basketball, skiing, and tennis. He is also an Eagle Scout and Order of the Arrow member.
